Buffalo Cauliflower


 The first time I made this, my teenage sons claimed that "buffalo" and "cauliflower" should never appear in the same sentence.  After one bite, they dramatically changed their minds.  Maybe you will too. :)


Buffalo Cauliflower

(adapted from this recipe)


Preheat the oven to 450 degrees.  Line a baking sheet with parchment paper.


Mix together the batter:

2 T. coconut or almond flour

1 t. paprika

2 t. garlic powder

1 t. salt

1/2 t. pepper

1/2 - 3/4 c. almond milk or cashew milk or macadamia milk


1 head cauliflower, cut into large florets (think buffalo wings)


Toss batter with cauliflower pieces and bake 20 minutes.


Meanwhile, make the basting sauce:

1/4 c. buffalo sauce (recipe follows)

2 T. coconut oil or olive oil

1 T. honey


Brush the sauce on the cauliflower, and bake another 20 minutes.  Serve immediately.


Paleo Buffalo Sauce

Combine and simmer the following:

1/4 c. vinegar

2 t. chili powder

2 t. garlic powder

1/2 t. cayenne pepper

1/4 t. salt

2 T. coconut oil
