Homemade Turkey Sausage


Every time a recipe calls for pork sausage, I make a batch of this instead.  It's lower fat, and it really does taste like sausage!


½ T. salt

1 T. chili powder

½ t. fennel seed

½ t. ground black pepper

1 lb. ground turkey


Dump mixture into a quart size freezer ziploc bag with one pound of ground turkey, and smoosh it around until the seasoning is well mixed into the meat.  Refrigerate for a couple hours for flavors to fuse.  Use in place of pork sausage (or squeeze out of ziploc bag into a hot pan and cook mini sausage links).
