I love Cafe Rio. If you don't live in Utah or Arizona, chances are you've never experienced the deliciousness of their sweet pork barbacoa salad with cilantro rice. It's my favorite. Luckily, I've figured out how to make it grain free, so I can indulge without indulging.
Lime and Chile "Rice"
In a large heavy pan, saute:
2 T. fat (butter, coconut oil, etc.)
1/2 medium onion, chopped
1 clove garlic, minced
Add the following:
1 head cauliflower, finely chopped, or shredded/grated
1/4 bunch cilantro, chopped
1 t. cumin
1 small can chopped green chiles
juice from 1 lime
1/2 c. water
salt and pepper to taste
Stir everything together. Use enough water so the mixture doesn't dry out and stick to thee pan, but not so much that it turns into a soup. Stir occasionally until cauliflower is tender.
