Curry Carrot Bisque

 Are you looking for something easy to make for supper?  Here it is!  Just a few simple ingredients, and soup is on the table.






Curry Carrot Bisque

Place the following in the instant pot:  

    * 1 1/2 lbs carrots, cut into chunks
    * 1/4 large onion, chopped
    * 2 cloves garlic
    * 1 T. curry powder (less, if you like it mild)
    * 3 c. chicken broth or stock
    * 1/2 t. salt

Set at high pressure for 6 minutes.  Once the carrots are soft, add:

    * 1/2 c. full fat coconut milk

Use immersion blender to puree.  Adjust seasonings as desired.   Serve hot.

This is a great soup on its own, or alongside grilled chicken and green salad.

Ginger Carrot Bisque Variation:

Swap 1 T. minced fresh ginger for the curry powder.
